It is with great honor to announce that we are the new owners of Huot’s. With long standing local ties to Saco and specifically Ferry Beach, the opportunity to carry on the traditions and experience of Huot’s Seafood Restaurant was one we could not pass up. We look forward to meeting you face to face very soon, but here is a little insight as to who we are.
Alan Waugh aka (Uncle Alan) will be our Managing Partner handling the day-to-day operations. He is from Westchester County, NY, and has spent the past 15 years summering in Ferry Beach. Alan has over twenty years restaurant experience, having most recently been East Coast Regional Manager for the City Tap House Restaurant Group.
You will see a very familiar face in Sean Walker. Born and raised in Saco, Sean’s first job as a kid was working in the Huot’s parking lot 22 years ago. Since then, he established a career as a Merchant Marine and currently works as a Terminal Operator at Gulf Oil in South Portland. Sean will wear many hats as a partner so expect to run into him in all areas.
Robbie Gillin (missing from the picture) brings over 25 years of restaurant/bar experience to Huot's. Robbie has owned and operated multiple restaurants and bars over the last two decades in NYC, The Hamptons, Westchester County, NY and Jupiter, Florida. He will bring a wealth of expertise to the partnership and is excited to experience the Camp Ellis community.
Ian Flanagan and Jonathan Corpina both have deep family roots in Ferry Beach for 80+ years. Following in his father’s footsteps, Ian has been a seasonal resident for 40 years and Jonathan married into the Ferry Beach community, vacationing here for 30 years. In fact, Jonathan’s wife and sister-in-laws were waitresses at Huot’s when they were in high school and college. Ian and Jonathan will help Uncle Alan wherever it is needed so do not be surprised to see them scooping ice cream or working the Tiki Bar out back.
After reading the incredible comments and overwhelming support the community had for Gerry and Denise’s most recent post, the one major takeaway we learned was, “If it ain’t broke, don’t fix it”. As evident by the blood, sweat and tears that Gerry and Denise poured into Huot’s, there is absolutely nothing broken here! From the Clam Cakes and Baked Haddock to the Scallops and Onion Rings, we will be following the same family recipes that have made Huot’s a big part of the Camp Ellis Community and New England for the past 87 years.
It goes without saying that without the support and guidance of Gerry and Denise, none of this would be possible. The history, the traditions and the memories we owe all to them. It is now our turn to continue the legacy. It is impossible to replace Denise and Gerry, but please know that our hearts are in the right place, and we will do whatever it takes to meet and hopefully exceed the expectations that have already been set.

The History of Huot'sDuring the midst of the Great Depression, Adelard J. Huot and Doris Corriveau Huot purchased Huot's Seafood Restaurant from Albert Huot in the year 1935. Doris wasted no time making her mark on Huot's. She quickly originated the recipes for the onion rings and clam cakes, as well as the batters that coat the seafood before they are cooked and served. We have cherished these recipes and take great pride in announcing that they are still used today.
The business was then handed down to the two sons in the family, Adelard O. Huot (Del) and Roger Huot. In 1997, Roger bought out Del's shares to become sole proprietor and he continued to manage Huot's with his wife Rachel Souliere Huot. In 1999, after 49 years in the restaurant business, Roger sold the restaurant to his daughter Denise Huot Gelinas and son in law Gerry Gelinas who have been running the business ever since. Going on their twenty-fourth season as owners, Gerry and Denise still value the traditions set by the Huot's who managed before them. |
